Escalloped Corn

  • 1/2 cup (1 stick) margarine
  • 2 eggs
  • 8 oz. carton sour cream
  • 8 oz. can cream style corn
  • 8 oz. can whole kernel corn UNDRAINED
  • 8 oz. package corn muffin mix

Preheat oven to 350 degrees. Melt margarine in a pan and pour into a bowl. Beat the eggs and add them to the margarine. Beat in sour cream, both cans of corn and muffin mix. Mix thoroughly. Put in a baking dish and bake for 1 hour.
