====== Confetti salad ====== PointsPlus Value= **4** Serves= **8** Difficulty= Easy 1 small can of White Shoepeg Corn 1 small can of Small peas 1/3 c. celery chopped small 1/3 c. green bell pepper chopped small 1/3 c. pickle relish 1/3 c. red onion chopped small. 1/4 c. each of Sugar, Oil, Vinegar. Mix well, Chill, Serve. You want to chop the celery, pepper and onion about the same size as the corn and the peas. It's not as good with yellow corn, but not bad. It's not as good with larger peas - the petit pois peas or young peas work best. I like to use Anaheim peppers instead of bell and some Jalapeno in there is really good, too. It's really nice to have some vibrant red color in there, so substitute 1/2 of the green bell with red or use a vine ripened red Jalapeno. I've added chopped cilantro and that was pretty darn spectacular...probably my favorite addition.
